  From what I learned some of our ancestors and still in some countries people soak their grains overnight befor cooking and Phytic acid protects the grain until it ready to grow.

I soak my oatmeal overnight before I eat it. I notice I get more energy when I soak them than when I do not. Plus they do not hurt my stomach as much when I do.</description>
